The Monastery of Santo Spirito dates back to the 1200. Built in the Gothic period, still the Romanesque architecture is evident.
It is positioned on the edge of a cliff overhanging a winding valley.

It is no coincidence that the sparse, beautifully rustic bedrooms at the Monastery of Santo Spirito previously inspired connections between simple living and enlightenment. The twelve bedrooms in the quiet, 800-year-old building allow for a peaceful retreat, with scenic views of both the valley of L'Aquila and its surrounding mountains.

The rooms, each named after a particular wind, are minimally and organically furnished, keeping in mind that it does not take much to enhance the natural splendor of the white stone walls or the sunlight that streams delicately across the red tile floors. Formerly old dormitories, the bedrooms were restored with careful attention to the site's cultural heritage and value. Although en suite bathrooms, televisions, Wi-Fi Internet connections and telephones were unobtrusively installed in the rooms in order to offer guests modern conveniences, the integrity of the locale was not damaged.

The goals in renovating the Monastery of Santo Spiritu included cultural conservation and sustainable development that would enhance the local economy. Natural wood furniture and organic fabrics were used in the bedrooms to disrupt the local ecosystem as little as possible, making this ancient building a responsible refuge for the culturally sensitive traveler.

Scorcio della Sala Ristorante

Found at the heart of this ancient Italian monastery, Scorcio della Sala Ristorante is a pristine tribute to the region's timeless principles of fine, simple living. With breathtaking white-stone walls that cast an aura of effortless elegance, the restaurant is structured around the values of memory and identity. The mission of the food is to speak to its evolution as a local art form and claim its place within regional history.

Meals at Scorcio della Sala are served at family-style banquet tables outfitted with beautiful white tablecloths and graceful candle-based accents. The first course consists of vegetable soups and homemade pasta perfected over countless years in recipes passed down through generations.

The second course showcases the region's fantastic natural offerings, based on beef and mutton brought straight from its pastures. During the winter months, Scorcio della Sala serves its much-lauded and traditional pork, until supplies have been exhausted. The meats are hearty but healthy-locally produced and free of the unnatural elements common in foods prepared for exportation.

The cheese course is rich and complex, up to par with the finest dairy the Old World has to offer. It is comprised of standard staples such as mozzarella, to a delicious sample from Pecorino and exotic cheeses made from sheep and cow's milk. The course is complemented by a variety of wheat, spelt or whole-meal breads baked in a wood-fire oven, and fresh vegetables and fruit, seasoned with unique touches of black truffle, saffron and red peppers, complete the palate-pleasing delights.

Traditional dessert fare includes the crunchy, amber-colored ferratelle, sugared nuts and soft sponge cake. The D.O.C. wines from local vineyards are exquisite, as are the spirits, which carry deep flavors herbs, soft fruit, wild cherries and fresh nuts.
